Time to Make the Syrup

7:00 AM - The pans are washed and the firewood is ready. I have optimistically prepared bottles to hold up to two gallons of syrup. More importantly, the coffee is ready and I am layers deep in warm clothes as it is only 12 degrees to start off this early morning. During the night, I can see that the wind has blown off one of the sap buckets. No chance of spilling any sap however since it is a frozen block. In my holding tanks, I will need to chip through a layer of ice to get to any liquid.
Once the fire gets roaring, the sun will be fully up and things should get to a toasty 32 degrees. Only my passion for this hobby and desire to follow through can get me out there now.
